Fricadeller: Not a Scandinavian swear word

In the past year, I've made great efforts to use up all of the ground beef in our freezer.  When I made it through our initial 80 lbs., I felt like it was a great accomplishment.  I'd made just about everything I could think of out of the ground beef, including 12 different kinds of meatballs.  So when Marty's aunt told me that she still had a lot left in her freezer and that I should come over and get more, I loaded up the next 50 lbs. and started planning our ground beef future.

For months now, I've had a page open in a cookbook that I received from my Grandma.  The cover and the title really appeal to me:


The cookbook was published by the St. Anthony Park Lutheran Ladies' Aid, of which I think my Grandma must have been a member.  Grandma lived on Como in St. Paul when she was growing up, which is not too far from the St. Anthony Park area.  The intro page of the cookbook describes the mission of the publication:


The book doesn't include a publication date, but the ads in the book show that the phone numbers started with the first two letters of the street on which the business was located followed by four numbers.  From what I can tell, this means that the book was published sometime before the 1950's when phone numbers became solely numeric.


And although I can't be completely sure, I don't think that Fricadeller is a Scandinavian swear word, instead another kind of meatball for us to try.  As usual, I plan on making a few changes to the recipe (all ground beef, and evaporated soy milk instead of the dairy kind).  I'm hopeful that it's a hit, and if nothing else, at least we'll be down 1-1/2 lbs. of ground beef.


I'm pretty sure that both Grandma and Mrs. Ommund Nielsen would approve.

    When I grew up in the 50's instead of 223 they said "capitol 3" or CA3 for the first 3 numbers. It made me smile to remember that when I read this, I think I'll start using it again. Good work for the extreme amounts of hamburger!
