At the countertop

It's only Thursday, and yet I feel like all I've done this week is cook.  As has become my ritual, I started out the week by planning out all the ways I could use up stuff in our freezer... mostly beef.  Here's what we tried this week:

Indonesian Pot Roast - my first time preparing this in the crock pot instead of as directed and I'd have to say that it was not good.  Tasted somewhat like dirt, spicy peanutty dirt, but still not that appealing.  The only thing the kids ate was the rice.  Plain.

Crock Pot Tomato Beef Stroganoff - Requested by Marty, I made a giant batch.  This recipe includes using two packets of "Beef Stroganoff Seasoning" which we can't use because it contains dairy, and I can't tell how much.  So instead, I tried to approximate the flavors I found on the ingredient list.  It was pretty tasty, and made a huge batch.

Potato Skins - I wanted to use up a partial package of bacon and some soy cheese and needed something that the kids would eat and decided to try potato skins.  I mean really, how could I go wrong?  I baked the potatoes earlier in the day and let them cool.  I scooped them out and Sophie brushed melted butter on each one.


Martin shredded the cheese and topped each potato with bacon.  I turned away for a moment and found that he'd made new of his own.  "Mom, macon and sour cream is REALLY good.  We should make this into a sandwich.  Maybe put some salad on there," he told me.  I can tell that we've been watching too much Iron Chef.


Meatloaf with Chili Sauce- Happy to find a way to use three pounds of ground beef (used instead of the blend of beef and pork), I put this one at the top of our list for the week.  It was delicious and made the house smell as garlicky as if we were sitting in Buca.  I made it in the morning and put it in the fridge, cooking it later in the afternoon.  It turned out great, but required extra cooking time this way.  I also thought it would be really fun to make each of us our own little loaf of bread to go with our meal.  I thought the kids would think it was great to have their own pan and would be inspired to eat more food.  I put the bread in the pans to rise and pulled them out to put in the oven just before dinner, making what appears to be the perfect comfort food for a bachelor party.


On the table this week: beef, beef and probably more beef.
